Located on the second floor of Chalet Ivy Hirafu, the dining room offers serene views of Mount Yotei and the quiet elegance of Niseko’s snow-covered scenery, an atmosphere that transforms each moment into something memorable.

Every dish is thoughtfully composed with premium Hokkaido wagyu and the region’s seasonal blessings from the mountains, forests, and sea. Guided by the same philosophy as our main restaurant, each menu is crafted under Chef Aoki’s direction, honoring the delicate character of each ingredient and the season’s natural rhythm. With just twenty seats—three tables for four and two that can welcome up to five guests—the space offers a calm intimacy.

Wagyu Tsubaki Annex was created to offer a more flexible and open dining experience while carrying forward the culinary spirit of the main restaurant. Under the supervision of Chef Aoki, seasonal ingredients from Hokkaido are crafted into refined dishes that reflect the natural rhythm of the region.

With serene views of Mt. Yotei, guests can enjoy both lunch and dinner in a calm, intimate setting.
Honoring the philosophy of the main Tsubaki, the ANNEX presents its own distinctive charm and a new way to savor the essence of Hokkaido.

Our menus transform daily,  guided by the season's finest offerings. What remains constant is Wagyu Tsubaki Annex commitment to showcasing Hokkaido's exceptional ingredients at their peak moment of perfection.

While we endeavor to accommodate dietary preferences with advance notice, the true essence of Tsubaki is best experienced through  carefully orchestrated progression of flavors.

Our cellar celebrates the dialogue between Hokkaido's culinary heritage and global viniculture. Alongside distinguished international selections that complement wagyu's rich character, we take pride in our extensive collection of Japanese sake, whisky, and emerging Hokkaido wines that speak eloquently of our terroir.

For connoisseurs, our reserve collection includes limited allocations from artisanal producers and rare vintage bottles acquired specifically to complement Chef Aoki's distinctive approach to wagyu kaiseki.

Lunch features a light, beautifully composed appetizer followed by a choice of main dish, and concludes with a delicate dessert of the day.
